Our name comes from the Pennsylvania Dutch word for “coal,” honoring the region’s heritage and the fire at the core of our cooking.
At the center is a Josper grill, fueled by Quebracho — the dense, long-burning “axe-breaker” charcoal that delivers steady heat, clean flame, and bold flavor. We serve prime cuts, simply seasoned and cooked over fire, alongside seafood and seasonal dishes that change often — a menu that’s always evolving.
